Kanazawa used to be a post town along the Koshu Kaido, a road that connected the Shinano and Kai province (current Nagano and Yamanashi prefecture) to Edo (modern-day Tokyo).
Back at the time, weddings, funerals, and other important functions used to be held at home, where fusuma sliding doors were temporarily taken aside to create one big room for the guests.
On such special occasions, every household would do their best to prepare what at the time was considered a luxurious meal. Funerals, in particular, required serving auspicious meatless food.
During this activity, you will get to make one of these auspicious foods: Abura-age Rolls, deep-fried tofu wraps filled with vegetables. The other dishes change depending on the season. You may prepare some dainty agar cakes or miso soup with yam paste.
To guide you through this experience are the town’s cute grannies. They will share with you all the secrets of traditional cuisine and help you prepare a truly delicious meal. Once everything is ready, let’s sit at the table and enjoy dinner with the grannies.

Post towns were created to provide traveling lords with a place to spend the night during the shogun's annual political pilgrimage. That is why every town had several lodgings to host the lord’s retinue and at least one large mansion to host the lord himself. Kanazawa is no exception, and even though most of the ancient buildings are gone, there are still a few of the bigger structures, such as the “uma-yado,” which is said could host 24 horses and a big salt warehouse.
